Ingredients
  • 400 gram Tenderstem broccoli
  • 100 gram Plain flour
  • 50 gram Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 cup Sparkling water
  • 1 cup Olive oil
  • 200 gram Tomatoes
  • 100 gram Red onion
  • 2 piece Garlic cloves
  • 20 gram Fresh basil leaves
  • 1 tablespoon Red wine vinegar
  • 1 tablespoon Extra virgin olive oil
  • to taste Salt and pepper
Instructions
  1. In a large mixing bowl, whisk together the plain flour, cornstarch, baking powder, paprika, and salt. Slowly pour in the sparkling water while whisking until a smooth batter forms.
  2. Heat olive oil in a large frying pan over medium-high heat.
  3. Dip the tenderstem broccoli into the batter, allowing any excess to drip off, and carefully place it into the hot oil. Fry in batches until golden and crispy, about 2-3 minutes per side. Remove from the pan and place on a paper towel-lined plate to drain excess oil.
  4. In a separate bowl, combine tomatoes, red onion, garlic cloves, fresh basil leaves, red wine vinegar, extra virgin olive oil, salt, and pepper. Mix well to make the salsa rossa.
  5. Serve the battered tenderstem broccoli with the salsa rossa on the side.
