Ingredients
  • 1 head Cauliflower
  • 2 medium Carrots
  • 1 cup Peas
  • 2 large Eggs
  • 2 tablespoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 3 stalks Green Onions
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. Grate the cauliflower head using a grater or food processor to create cauliflower rice.
  2. Heat a large skillet or wok over medium heat and add sesame oil.
  3. Add minced garlic and ginger to the skillet and sauté for 1-2 minutes.
  4. Add grated cauliflower, carrots, and peas to the skillet and stir-fry for 5-6 minutes until vegetables are tender.
  5. Push the cauliflower mixture to one side of the skillet and crack the eggs into the other side.
  6. Scramble the eggs until cooked through and then mix them with the cauliflower mixture.
  7. Stir in soy sauce, salt, and pepper. Cook for an additional 2-3 minutes.
  8. Garnish with chopped green onions and serve hot.
