Ingredients
  • 1 cup Barley
  • 1 cup Rice
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. Rinse the barley and rice under cold water.
  2. In a large saucepan, heat the olive oil over medium heat.
  3. Add the onion and garlic, and sauté until softened.
  4. Add the barley and rice to the saucepan and stir to coat in the oil.
  5. Pour in the vegetable broth and season with salt and black pepper.
  6. Bring to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the grains are tender and the liquid is absorbed.
  7. Remove from heat and let it rest for 5 minutes.
  8. Fluff the pilaf with a fork and stir in the parsley.
  9. Serve hot.
