  • 1 cup Barley
  • 2 juice Lime
  • 1 cup Red bell pepper
  • 1 cup Corn kernels
  • 1 cup Black beans
  • 1 small Red onion
  • 0.5 cup Cilantro
  • 1 medium Avocado
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the barley according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooked barley, lime juice, red bell pepper, corn kernels, black beans, red onion, cilantro, avocado, olive oil, salt, and black pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Serve chilled and enjoy!
