Ingredients
  • 1 cup Barley
  • 1 can Black beans
  • 1 small Onion
  • 2 clove Garlic
  • 1 cup Bread crumbs
  • 1 large Egg
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoon Olive oil
  • 4 piece Buns
  • 4 leaf Lettuce
  • 4 slice Tomato
  • 4 slice Avocado
Instructions
  1. Cook the barley according to package instructions. Drain and set aside.
  2. In a large bowl, mash the black beans with a fork or potato masher.
  3. Add the cooked barley, finely chopped onion, minced garlic, bread crumbs, egg, cumin, chili powder, salt, and pepper to the bowl. Mix well.
  4. Form the mixture into patties and refrigerate for 10 minutes.
  5. Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side or until golden brown.
  6. Toast the buns and assemble the burgers with lettuce, tomato, avocado, and the barley black bean patties.
  7. Serve and enjoy!
