Ingredients
  • 1 cup Barley
  • 1 cup Red lentils
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Carrot
  • 2 tablespoon Olive oil
  • 2 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 2 tablespoon Cilantro
Instructions
  1. Rinse the barley and red lentils under cold water.
  2. Heat olive oil in a large pot and saute onions and garlic until translucent.
  3. Add carrots and cook for 2 minutes.
  4. Add barley, red lentils, cumin, turmeric, salt, and black pepper. Stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 25-30 minutes or until the barley and lentils are tender.
  7. Remove from heat and let it rest for 5 minutes.
  8. Fluff the pilaf with a fork and stir in lemon juice and cilantro.
  9. Serve hot and enjoy!
