  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
  2. Add barley, lentils, vegetable broth, bay leaf, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 25 minutes, or until barley and lentils are cooked.
  3. Remove bay leaf and thyme sprigs. Serve hot, garnished with fresh parsley.
