Ingredients
  • 1 cup Barley
  • 1 cup Corn
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 cup Red onion
  • 0.5 cup Fresh basil leaves
  • 0.5 cup Fresh chives
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook barley according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooked barley, corn, cherry tomatoes, cucumber, and red onion.
  3. In a blender, combine fresh basil leaves, fresh chives, olive oil, lemon juice, salt, and black pepper. Blend until smooth.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled and enjoy!
