Ingredients
  • 2 pound Spaghetti squash
  • 2 tablespoon Olive oil
  • 4 clove Garlic
  • 1 medium Onion
  • 1 medium Bell pepper
  • 1 cup Mushrooms
  • 2 cup Spinach
  • 1 cup Tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoon Parmesan cheese
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Place the squash halves cut-side down on a baking sheet and bake for 30-40 minutes, or until the flesh is tender.
  4. Meanwhile, heat olive oil in a large skillet over medium heat.
  5. Add garlic, onion, bell pepper, mushrooms, and sauté until vegetables are tender.
  6. Add spinach, tomato sauce, Italian seasoning, salt, and black pepper. Cook for 5 minutes.
  7. Once the spaghetti squash is cooked, use a fork to scrape the flesh into spaghetti-like strands.
  8. Add the spaghetti squash strands to the skillet and toss to combine with the sauce and vegetables.
  9. Cook for an additional 2-3 minutes until heated through.
  10. Serve the spaghetti squash mixture topped with grated Parmesan cheese.
