Ingredients
  • 2 piece Ripe bananas
  • 1 cup Almond flour
  • 2 tablespoon Coconut flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1 pinch Salt
  • 2 piece Eggs
  • 2 tablespoon Coconut oil
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Stevia or sweetener of choice
  • 1/4 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add almond flour, coconut flour, baking powder, cinnamon, and salt. Mix well.
  4. In a separate bowl, whisk together eggs, coconut oil, vanilla extract, and sweetener.
  5. Pour the wet ingredients into the banana mixture and stir until well combined.
  6. Fold in the chopped walnuts.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
