Ingredients
  • 250 gram Cherry Tomatoes
  • 200 gram Cucumber
  • 100 gram Red Onion
  • 100 gram Kalamata Olives
  • 150 gram Green Bell Pepper
  • 150 gram Yellow Bell Pepper
  • 200 gram Feta Cheese
  • 50 gram Balsamic Vinegar
  • 30 gram Olive Oil
  • 5 gram Dried Oregano
  • 5 gram Salt
  • 3 gram Black Pepper
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Cut the cherry tomatoes, cucumber, red onion, green bell pepper, and yellow bell pepper into bite-sized pieces.
  3. In a mixing bowl, combine the cherry tomatoes, cucumber, red onion, kalamata olives, green bell pepper, and yellow bell pepper.
  4. In a small bowl, whisk together the balsamic vinegar, olive oil, dried oregano, salt, and black pepper to make the dressing.
  5. Pour the dressing over the vegetable mixture and toss until well coated.
  6. Spread the vegetable mixture onto a baking sheet and roast in the preheated oven for 20 minutes, or until the vegetables are tender.
  7. Remove from the oven and let it rest for 10 minutes.
  8. Crumble feta cheese over the roasted vegetables.
