Ingredients
  • 300 gram Zucchini
  • 200 gram Carrot
  • 100 gram Onion
  • 2 clove Garlic
  • 50 gram Chickpea flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Grate the zucchini and carrot, then squeeze out any excess moisture.
  2. Finely chop the onion and garlic.
  3. In a large bowl, combine the grated zucchini, carrot, onion, garlic, chickpea flour, baking powder, paprika, cumin, salt, and black pepper.
  4. Mix well until all the ingredients are evenly combined.
  5. Preheat the oven to 200°C (400°F).
  6. Line a baking sheet with parchment paper and brush it with olive oil.
  7. Scoop spoonfuls of the mixture onto the prepared baking sheet, shaping them into fritters.
  8. Brush the tops of the fritters with olive oil.
  9. Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and crispy.
  10. Remove from the oven and let them rest for 5 minutes before serving.
  11. Serve the baked zucchini carrot fritters as a delicious appetizer or snack.
