Ingredients
  • 400 gram Sweet potatoes
  • 200 gram Chickpeas, cooked
  • 1 piece Onion, finely chopped
  • 2 clove Garlic cloves, minced
  • 1 cup Fresh parsley, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 2 tablespoon Chickpea flour
  • 0.5 teaspoon Baking powder
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Pierce the sweet potatoes with a fork and microwave them for 5 minutes to soften.
  3. In a large bowl, mash the cooked sweet potatoes and chickpeas together.
  4. Add the onion, garlic, parsley, cumin, coriander, salt, black pepper, olive oil, lemon juice, chickpea flour, and baking powder. Mix well.
  5. Shape the mixture into small patties and place them on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, flipping halfway through, until the falafel is golden brown.
  7. Remove from the oven and let them rest for 10 minutes.
  8. Serve the baked sweet potato falafel with tahini sauce or your favorite dipping sauce.
