Ingredients
  • 4 piece Large tomatoes
  • 1 cup Cooked quinoa
  • 1 cup Spinach
  • 1 cup Feta cheese
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh basil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the tomatoes and scoop out the seeds and pulp.
  3. In a mixing bowl, combine cooked quinoa, spinach, feta cheese, minced garlic, olive oil, fresh basil, salt, and black pepper.
  4. Stuff the tomato shells with the quinoa mixture.
  5. Place the stuffed tomatoes in a baking dish.
  6. Bake for 30 minutes or until the tomatoes are tender.
  7. Remove from the oven and let them rest for 5 minutes.
  8. Serve hot and enjoy!
