Acorn squash is named for its acorn-like shape and is a good source of dietary fiber and vitamins A and C.

  1. Preheat the oven to 400°F (200°C). Cut the acorn squash in half and scoop out the seeds.
  2. Brush the inside of each squash half with olive oil and maple syrup. Sprinkle with cinnamon and salt.
  3. Place the squash halves cut-side down on a baking sheet and bake for 30 minutes.
  4. While the squash is baking, melt the butter in a small saucepan. Add the pecans and dried cranberries, and cook for 5 minutes, stirring occasionally.
  5. Remove the squash from the oven and flip them over. Fill each squash half with the pecan and cranberry mixture.
  6. Return the squash to the oven and bake for an additional 15 minutes.
  7. Remove from the oven and let rest for 5 minutes before serving.
