Ingredients
  • 2 large Eggplants
  • 2 medium Tomatoes
  • 1 large Onion
  • 2 medium Green chili
  • 3 small Garlic cloves
  • 1 inch Ginger
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 2 tablespoon Oil
Instructions
  1. Roast the eggplants directly over the fire until the skin is charred and blistered.
  2. Once cool, remove the skin and mash the roasted eggplants.
  3. In a pan, heat oil and add cumin seeds.
  4. Add chopped onion and sauté until golden brown.
  5. Add chopped tomatoes, green chili, ginger, and garlic. Cook until tomatoes are soft.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Add the mashed eggplants and cook for 5-7 minutes.
  8. Garnish with fresh cilantro and lemon juice.
  9. Serve hot with roti or rice.
