Ingredients
  • 500 gram Eggplant
  • 1 medium Onion
  • 2 medium Tomato
  • 2 piece Green chili
  • 1 inch Ginger
  • 3 clove Garlic
  • 2 tablespoon Cilantro
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoon Oil
Instructions
  1. Roast the eggplant on an open flame until the skin is charred. Remove the skin and mash the pulp.
  2. Heat oil in a pan and sauté onions, green chili, ginger, and garlic until golden brown.
  3. Add tomatoes and cook until they are soft.
  4. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
  5. Add the mashed eggplant and cook for 5 minutes.
  6. Garnish with cilantro and serve hot with roti or rice.
