Ingredients
  • 2 medium Eggplant
  • 3 tablespoon Tahini
  • 2 clove Garlic
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • to taste for garnish Parsley
Instructions
  1. Preheat the grill or oven to high heat.
  2. Prick the eggplants with a fork and place them on the grill or in the oven. Cook until the skin is charred and the flesh is soft, about 30 minutes.
  3. Remove the eggplants from the heat and let them cool.
  4. Peel the eggplants and place the flesh in a colander to drain excess liquid.
  5. In a food processor, combine the eggplant flesh, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth.
  6. Transfer the baba ghannouj to a serving dish and garnish with parsley.
  7. Let it rest for 30 minutes to allow the flavors to meld.
  8. Serve with pita bread or fresh vegetables.
