Ingredients
  • 2 medium Eggplant
  • 3 tablespoon Tahini
  • 2 tablespoon Lemon Juice
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cumin
  • 1 tablespoon Parsley
Instructions
  1. Preheat the oven to 400°F (200°C). Cut the eggplants in half lengthwise and place them on a baking sheet. Drizzle olive oil over the eggplants and sprinkle with salt. Roast the eggplants in the preheated oven for about 30-40 minutes, or until the flesh is soft and the skin is charred. Remove the eggplants from the oven and let them cool for a few minutes. Scoop out the flesh from the eggplants and transfer it to a blender or food processor. Add tahini, lemon juice, garlic, ground cumin, and salt to the blender. Blend until smooth and creamy. Transfer the baba ganoush to a serving bowl and drizzle with olive oil. Garnish with chopped parsley. Serve with pita bread or vegetables.
