Ingredients
  • 2 medium Eggplant
  • 3 tablespoon Tahini
  • 2 cloves Garlic
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 2 tablespoon Parsley
Instructions
  1. Preheat the grill or oven to high heat.
  2. Prick the eggplants with a fork and place them on the grill or in the oven. Cook until the skin is charred and the flesh is soft, about 20-30 minutes.
  3. Remove the eggplants from the heat and let them cool slightly.
  4. Cut the eggplants in half lengthwise and scoop out the flesh. Discard the skin.
  5. In a food processor, combine the eggplant flesh, tahini, garlic, lemon juice, olive oil, and salt. Process until smooth.
  6. Transfer the baba ganouj to a serving dish and garnish with parsley.
  7. Serve with pita bread or vegetables for dipping.
