Slice the eggplant, zucchini, red bell pepper, and yellow bell pepper into thin rounds.

Finely chop the onion and mince the garlic cloves.

In a baking dish, layer the sliced vegetables, onion, garlic, and tomatoes. Drizzle with olive oil and sprinkle with fresh thyme, rosemary, salt, and black pepper.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender.
