  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 2 medium Potatoes
  • 2 large Tomatoes
  • 4 cup Vegetable broth
  • 1 can Cannellini beans
  • 2 medium Zucchini
  • 1 cup Green beans
  • 1 cup Kale
  • 2 tablespoon Fresh basil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoon Parmesan cheese
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté for 5 minutes.
  2. Add diced carrots, celery, and potatoes. Cook for another 5 minutes.
  3. Stir in chopped tomatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add cannellini beans, zucchini, green beans, and kale. Cook for an additional 10 minutes.
  6. Season with salt and black pepper.
  7. Serve hot, garnished with fresh basil and grated Parmesan cheese.
