Ingredients
  • 1 medium Onion
  • 4 clove Garlic cloves
  • 1 inch Ginger
  • 2 medium Tomatoes
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 cup Cauliflower florets
  • 1 cup Green peas
  • 1 cup Coconut milk
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoon Fresh coriander leaves
Instructions
  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add finely chopped onion, garlic, and ginger. Saute until golden brown.
  3. Add chopped tomatoes and cook until soft.
  4. Add all the spices - coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  5. Add chopped vegetables - potatoes, carrots, cauliflower florets, and green peas. Mix well.
  6. Cover and cook for 10 minutes or until the vegetables are tender.
  7. Add coconut milk and garam masala. Mix well and simmer for another 5 minutes.
  8. Garnish with fresh coriander leaves.
  9. Serve hot with rice or naan bread.
