Ingredients
  • 200 gram Asparagus
  • 1 cup Bulgur
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 cup Fresh parsley
  • 1 cup Fresh mint
  • 4 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook bulgur according to package instructions. Once cooked, let it cool.
  2. Trim and blanch the asparagus in boiling water for 2 minutes. Drain and rinse with cold water.
  3. Chop the cherry tomatoes, cucumber, parsley, and mint.
  4. In a large bowl, combine the cooked bulgur, chopped vegetables, lemon juice, olive oil, salt, and black pepper. Mix well.
  5. Add the blanched asparagus and gently toss to combine.
  6. Allow the tabbouleh to rest for 30 minutes to let the flavors meld.
  7. Serve chilled and enjoy!
