Ingredients
  • 500 gram Asparagus
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Trim the asparagus and cut into small pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add asparagus and cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Season with salt, black pepper, and lemon juice. Stir well.
  7. Serve hot, garnished with fresh parsley.
