Ingredients
  • 500 gram Asparagus
  • 1 piece Onion
  • 2 clove Garlic
  • 1 piece Potato
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Trim the asparagus and cut into 1-inch pieces.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic, sauté until translucent.
  4. Add asparagus and potato, cook for 2 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes or until vegetables are tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Season with salt, black pepper, and lemon juice.
  9. Serve hot, garnished with fresh parsley.
