Ingredients
  • 250 stalks Asparagus
  • 100 grams Walnuts
  • 150 grams Cherry tomatoes
  • 1 small Red onion
  • 1 juice of Lemon
  • 2 tablespoon Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
Instructions
  1. Trim the ends of the asparagus and blanch them in boiling water for 2 minutes. Then, transfer them to ice water to stop the cooking process.
  2. In a mixing bowl, combine the cherry tomatoes (halved), thinly sliced red onion, and chopped walnuts.
  3. In a separate bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.
  4. Cut the asparagus into bite-sized pieces and add them to the mixing bowl with the other ingredients.
  5. Pour the dressing over the salad and toss gently to coat everything evenly.
  6. Serve the asparagus salad with walnuts immediately and enjoy!
