Ingredients
  • 4 medium-sized Yellow Squash
  • 4 medium-sized Tomatoes
  • 1 small Red Onion
  • 2 clove Garlic
  • 1 handful Fresh Basil Leaves
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Slice the yellow squash, tomatoes, red onion, and garlic cloves.
  3. Tear the basil leaves into smaller pieces.
  4. In a bowl, combine the sliced vegetables, torn basil leaves, olive oil, salt, and black pepper. Mix well.
  5. Take 4 large pieces of aluminum foil and divide the vegetable mixture evenly among them.
  6. Fold the foil over the vegetables, sealing the edges to create a packet.
  7. Place the packets on a baking sheet and bake in the preheated oven for 30 minutes.
  8. Carefully remove the packets from the oven and let them rest for a few minutes.
  9. Open the packets carefully to release the steam.
  10. Serve the yellow squash and tomato packets hot.
