Ingredients
  • 300 gram Carrots
  • 300 gram Parsnips
  • 300 gram Sweet potatoes
  • 150 gram Onion
  • 4 gram Garlic cloves
  • 2 teaspoon Olive oil
  • 4 cup Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 gram Fresh cilantro
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the carrots, parsnips, and sweet potatoes into small cubes.
  3. Place the chopped vegetables, onion, and garlic cloves on a baking tray.
  4. Drizzle with olive oil, cumin, coriander, turmeric, salt, and black pepper.
  5. Toss to coat the vegetables evenly.
  6. Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized.
  7. Transfer the roasted vegetables to a large pot.
  8. Add vegetable broth and bring to a simmer.
  9. Cook for 10 minutes to allow the flavors to meld together.
  10. Use an immersion blender or a regular blender to puree the soup until smooth.
  11. Season with additional salt and pepper to taste.
  12. Serve hot, garnished with fresh cilantro.
