Ingredients
  • 1 cup Basmati rice
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 2 cup Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1/2 chopped Dried apricots
  • 2 tablespoon Pine nuts
  • 2 chopped Fresh parsley
Instructions
  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a large saucepan over medium heat.
  3. Add the onion and garlic and cook until softened.
  4. Add the rice and stir to coat with the oil.
  5. Add the vegetable broth, salt, and black pepper.
  6. Bring to a boil, then reduce heat to low and cover.
  7. Simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  8. Remove from heat and let it rest for 5 minutes.
  9. Fluff the rice with a fork and stir in the dried apricots, pine nuts, and fresh parsley.
  10. Serve hot.
