Ingredients
  • 16 ounce Apricots
  • 1.5 cup All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Unsalted butter
  • 1 cup Rolled oats
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a medium saucepan, combine the apricots, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens, stirring constantly.
  3. In a separate bowl, combine the flour, oats, sugar, salt, and vanilla extract. Cut in the butter until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish. Spread the apricot mixture over the crust. Sprinkle the remaining crumb mixture on top.
  5. Bake for 30-35 minutes, or until golden brown. Allow to cool before cutting into squares.
  6. Serve and enjoy!
