Ingredients
  • 500 gram Beets
  • 2 teaspoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Honey
  • 2 ounce Goat cheese
  • 100 gram Walnuts
  • 1 cup Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the beets, then cut them into small wedges.
  3. In a bowl, toss the beets with olive oil, salt, and black pepper.
  4. Place the beets on a baking sheet and roast in the oven for 30-35 minutes, or until tender.
  5. In a small bowl, whisk together balsamic vinegar and honey.
  6. Remove the beets from the oven and drizzle the balsamic mixture over them.
  7. Crumble the goat cheese and sprinkle it over the beets.
