Ingredients
  • 1 cup Wild rice
  • 2 cup Vegetable broth
  • 2 ounce Almonds
  • 1 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the wild rice under cold water.
  2. In a large pot, bring the vegetable broth to a boil.
  3. Add the wild rice to the boiling broth and reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is tender.
  4. While the rice is cooking, heat olive oil in a skillet over medium heat.
  5. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  6. Add the almonds to the skillet and cook until they are lightly toasted.
  7. Once the rice is cooked, fluff it with a fork and transfer it to a serving bowl.
  8. Add the sautéed onion, garlic, and almonds to the rice and toss to combine.
  9. Season with salt, pepper, and fresh parsley.
  10. Let the flavors meld for 5 minutes before serving.
