Ingredients
  • 500 gram Red bell peppers
  • 250 gram Eggplant
  • 2 piece Garlic cloves
  • 3 tablespoon Olive oil
  • 1 tablespoon White vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
Instructions
  1. Preheat the oven to 200°C (400°F). Place the bell peppers and eggplant on a baking sheet and roast for about 30 minutes, or until the skin is charred and blistered. Remove the vegetables from the oven and let them cool. Peel off the skin, remove the seeds, and chop the flesh into small pieces. In a blender or food processor, combine the roasted vegetables, garlic cloves, olive oil, white vinegar, salt, and sugar. Blend until smooth. Transfer the mixture to a saucepan and cook over low heat for about 10 minutes, stirring occasionally. Remove from heat and let it cool. Serve ajvar as a side dish or condiment. Enjoy!
