Ingredients
  • 1 can Tomatoes
  • 4 tablespoon Peanut Butter
  • 2 medium Sweet Potato
  • 1 can Chickpeas
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 4 cup Vegetable Stock
  • 1 can Coconut Milk
  • 1 bunch Cilantro
  • juice of 1 Lime
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 0.5 teaspoon Cayenne Pepper
Instructions
  1. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  2. Add the ground cumin, ground coriander, and cayenne pepper. Stir well.
  3. Add the sweet potato, tomatoes, vegetable stock, and coconut milk. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
  5. Stir in the peanut butter and chickpeas. Cook for another 5 minutes.
  6. Season with salt and lime juice.
  7. Serve hot, garnished with chopped cilantro.
