Ingredients
  • 1 cup Quinoa
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 can Canned diced tomatoes
  • 1 teaspoon Curry powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse quinoa under cold water.
  2. In a large pot, heat some oil and sauté onion and garlic until fragrant.
  3. Add carrots and celery, and cook for a few minutes.
  4. Add quinoa, vegetable broth, canned diced tomatoes, curry powder, cumin powder, paprika, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in fresh cilantro and lemon juice.
  7. Let the soup rest for 5 minutes before serving.
  8. Serve hot and enjoy!
