Rinse quinoa under cold water.

In a large pot, heat some oil and sauté onion and garlic until fragrant.

Add carrots and celery, and cook for a few minutes.

Add quinoa, vegetable broth, canned diced tomatoes, curry powder, cumin powder, paprika, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 20 minutes.

Stir in fresh cilantro and lemon juice.

Let the soup rest for 5 minutes before serving.
