  • 1 head Cabbage
  • 1 can Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Carrots
  • 2 medium Potatoes
  • 2 cup Vegetable broth
  • 2 tablespoon Peanut butter
  • 1 teaspoon Curry powder
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrots and potatoes, cook for 5 minutes.
  3. Stir in cabbage, tomatoes, vegetable broth, peanut butter, curry powder, cayenne pepper, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Serve hot, garnished with fresh cilantro.
