Ingredients
  • 300 gram Eggplant
  • 300 gram Zucchini
  • 200 gram Bell peppers
  • 150 gram Onion
  • 2 piece Garlic cloves
  • 400 gram Tomatoes
  • 2 teaspoon Olive oil
  • 10 gram Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, bell peppers, and onion into thin rounds.
  3. Crush the garlic cloves.
  4. In a baking dish, layer the sliced vegetables and garlic.
  5. Pour the tomatoes over the vegetables.
  6. Drizzle with olive oil and sprinkle with salt and black pepper.
  7. Bake for 40 minutes, or until the vegetables are tender.
  8. Let it rest for 10 minutes before serving.
  9. Garnish with fresh basil leaves.
