Ingredients
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Red bell pepper
  • 1 medium Carrot
  • 2 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 2 can Kidney beans
  • 1 can Black beans
  • 1 can Crushed tomatoes
  • 1 cup Vegetable stock
  • 2 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, red bell pepper, and carrot. Sauté for 5 minutes.
  2. Add smoked paprika, cumin, and chili powder. Stir well.
  3. Add kidney beans, black beans, crushed tomatoes, and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove from heat and let it rest for 10 minutes.
  5. Stir in lime juice, fresh cilantro, salt, and black pepper.
  6. Serve hot and enjoy!
