Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.

Add carrots and celery, and cook for 5 minutes.

Add cranberry beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

Season with salt and black pepper.

Remove from heat and let the soup rest for 10 minutes.

Serve hot, garnished with fresh parsley.
