Ingredients
  • 1 cup Barley
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 cup Green beans
  • 1 cup Corn kernels
  • 2 medium Tomatoes
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Olive oil
  • 1 tablespoon Fresh parsley
Instructions
  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are tender.
  2. Add barley, vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Add green beans, corn kernels, and tomatoes. Simmer for an additional 10 minutes.
  4. Remove from heat and let rest for 10 minutes.
  5. Serve hot, garnished with fresh parsley.
