Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Bell pepper
  • 1 medium Carrot
  • 1 can Canned diced tomatoes
  • 1 can Canned kidney beans
  • 1 can Canned black beans
  • 1 can Canned corn
  • 2 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Vegetable broth
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, diced bell pepper, and sliced carrot. Cook for 5 minutes until vegetables are tender.
  3. Add canned diced tomatoes, drained kidney beans, drained black beans, and drained corn. Stir in chili powder, ground cumin, salt, and black pepper.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Remove from heat and stir in fresh cilantro and lime juice.
  6. Serve hot and enjoy!
