Rinse the split peas under cold water.

In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.

Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until the split peas are soft.

Remove bay leaves and use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
