Bring a pot of water to boil and blanch the okra for 2 minutes. Drain and rinse with cold water.

Cut the tofu, red bell pepper, cucumber, red onion, and fresh cilantro into bite-sized pieces.

In a small bowl, whisk together lime juice, olive oil, soy sauce, honey, minced garlic, grated ginger, salt, and black pepper to make the dressing.

In a large mixing bowl, combine the blanched okra, tofu, red bell pepper, cucumber, red onion, and fresh cilantro. Pour the dressing over the salad and toss gently to coat.

Sprinkle roasted peanuts on top and serve chilled.
