Peel and chop the potatoes, onion, and garlic cloves.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.

Add the chopped potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.

Remove the pot from heat and let it cool slightly. Using an immersion blender or regular blender, blend the soup until smooth.

Return the soup to the pot and place it back on the stove over low heat. Stir in the cilantro, lemon juice, salt, and black pepper.
