Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.

In a large bowl, combine the almond flour, gluten-free flour blend, coconut sugar, ground flaxseed, cinnamon, nutmeg, baking powder, baking soda, and salt.

In a separate bowl, whisk together the almond milk, coconut oil, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated carrots, chopped walnuts, and raisins.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
