Rinse the lentils and set aside.

In a crock pot, combine lentils, vegetable broth, carrots, celery, onion, garlic, tomato paste, oregano, basil, thyme, bay leaves, salt, and black pepper.

Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours, until lentils are tender.

Stir in zucchini, spinach, and parsley. Cover and cook for an additional 15 minutes.
