Warm Collard Quinoa Salad
Collard greens are a good source of vitamins A, C, and K, as well as fiber and calcium.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Cook quinoa according to package instructions. Set aside.

Remove the stems from collard greens and chop the leaves into bite-sized pieces.

Heat olive oil in a large pan over medium heat. Add chopped collard greens and sauté for 5 minutes until wilted.

Add minced garlic and sauté for another minute.

In a large bowl, combine cooked quinoa, sautéed collard greens, cherry tomatoes, diced red onion, lemon juice, salt, and black pepper. Toss well to combine.

Let the salad sit for 5 minutes to allow the flavors to meld.

Serve warm, topped with crumbled feta cheese and toasted almonds.
