Cranberry-Kissed Sweet Potatoes
Sweet potatoes are not actually potatoes, but rather root vegetables that belong to the morning glory family.

Preheat the oven to 375°F (190°C).

Peel and cube the sweet potatoes.

In a large bowl, combine the sweet potatoes, cranberries, maple syrup, melted butter, cinnamon, nutmeg, and salt. Toss to coat evenly.

Transfer the mixture to a baking dish and cover with foil.

Bake for 30 minutes, then remove the foil and sprinkle the pecans on top.

Continue baking uncovered for another 15 minutes, or until the sweet potatoes are tender and the cranberries have burst.
